{"id":16839,"date":"2023-11-03T06:23:34","date_gmt":"2023-11-03T05:23:34","guid":{"rendered":"https:\/\/thesmartcityjournal.cibeles.net\/sin-categorizar\/desarrollada-una-tecnologia-capaz-de-obtener-setas-enriquecidas-con-radiacion-uv-b-para-paliar-el-deficit-de-vitamina-d\/"},"modified":"2023-11-02T20:13:17","modified_gmt":"2023-11-02T19:13:17","slug":"desarrollada-una-tecnologia-capaz-de-obtener-setas-enriquecidas-con-radiacion-uv-b-para-paliar-el-deficit-de-vitamina-d","status":"publish","type":"post","link":"https:\/\/www.thesmartcityjournal.com\/es\/agrosmart\/desarrollada-una-tecnologia-capaz-de-obtener-setas-enriquecidas-con-radiacion-uv-b-para-paliar-el-deficit-de-vitamina-d","title":{"rendered":"Desarrollada una tecnolog\u00eda capaz de obtener setas enriquecidas con radiaci\u00f3n UV-B para paliar el d\u00e9ficit de vitamina D"},"content":{"rendered":"<p class=\"lead\">El estudio ha sido llevado a cabo por investigadores del Grupo de Ecofisiolog\u00eda Vegetal, Cambio Clim\u00e1tico y Medio Ambiente de la Universidad de La Rioja<\/p>\n<p>Un equipo liderado por investigadores de la Universidad de La Rioja ha desarrollado una tecnolog\u00eda capaz de obtener setas enriquecidas con vitamina D2 mediante irradiaci\u00f3n de luz ultravioleta.&nbsp;Estas setas enriquecidas pueden emplearse para paliar el d\u00e9ficit de esta vitamina a trav\u00e9s de suplementos alimenticios, especialmente indicados para veganos.&nbsp;<\/p>\n<p>El estudio \u2013publicado en la revista cient\u00edfica LWT &#8211; Food Science and Technology, forma parte de una tesis doctoral actualmente en desarrollo- ha sido llevado a cabo por investigadores del Grupo de Ecofisiolog\u00eda Vegetal, Cambio Clim\u00e1tico y Medio Ambiente de la Universidad de La Rioja, encabezado por Encarnaci\u00f3n N\u00fa\u00f1ez Olivera, junto a investigadores de la Unidad de Enfermedades Infecciosas, Microbiota y Metabolismo del Centro de Investigaci\u00f3n Biom\u00e9dica de La Rioja (CIBIR).<\/p>\n<p>Tambi\u00e9n ha contado con la colaboraci\u00f3n del sector privado, como por ejemplo la empresa riojana de base tecnol\u00f3gica Clean-Biotec, y fue financiado por la Agencia de Desarrollo Econ\u00f3mico de la Rioja (ADER).<\/p>\n<p>Entre los productos obtenidos destacan las c\u00e1psulas (600 mg) de polvo de shiitake enriquecido, que contienen una cantidad de vitamina D equivalente a la ingesta m\u00ednima diaria para adultos.<br \/>La tecnolog\u00eda empleada es de f\u00e1cil adaptaci\u00f3n al mercado y proporciona complementos nutricionales seguros y econ\u00f3micos.<\/p>\n<p>La investigaci\u00f3n se ha centrado en tres setas: shiitake (Lentinula edodes), seta de cardo (Pleurotus eryngii) y champi\u00f1\u00f3n Portobello (Agaricus brunnescens). Las tres especies, de producci\u00f3n ecol\u00f3gica, se sometieron a radiaci\u00f3n UV-B en distintas dosis y preparados (lonchas frescas y polvo seco), en una instalaci\u00f3n semiindustrial de dise\u00f1o propio.<\/p>\n<p>\u201cTodos los tratamientos produjeron un incremento significativo de vitamina D2 en las setas, en especial en el polvo de shiitake, donde aument\u00f3 hasta 500 veces, manteniendo el resto de su composici\u00f3n nutricional\u201d, explica Encarnaci\u00f3n N\u00fa\u00f1ez.&nbsp;<\/p>\n<p>Tras un an\u00e1lisis microbiol\u00f3gico para garantizar un consumo seguro, este polvo de shiitake enriquecido se encapsul\u00f3 y se estudi\u00f3 c\u00f3mo afectaba su ingesta -durante un periodo de dos meses- a la biodisponibilidad de vitamina D2 en humanos. Se comprob\u00f3 que este suplemento alimenticio mantiene los niveles de vitamina D en niveles
